COLD APPLE SOUP
I had the chance to meet and converse with the extraordinary chef of this restaurant who lived for two decades in France, inspired by the best dishes of France located 8000km from Japan. Through his mastery of French cuisine and the use of local products, he proved to us that this 70 years old man is one of the best chefs in the area.
Prices are high (between ¥ 6,000 and ¥ 15,000), but they are quickly justified by the quality of the food on your plate. The Yamazaki restaurant is in the gourmet category and it made me order for the ¥8,000 course on this evening.
I have been traveling during the month of September which is the apple season in northern Japan and many dishes from there are dedicated to apples as that marks the arrival of autumn.
Cold apple soup is one of the most popular dishes. The small transparent glass container, filled with the apple soup, is placed elegantly on a chilled glass containing crushed ice cubes in order to keep the right temperature to preserve the tasting. The taste is reminiscent from high quality sweet fruity yoghurts; it was absolutely superb.
Thick, sweet, and crammed full of fresh apples. This must surely be the finest soup in Hirosaki.
