One of the best things about ordering ramen is getting a side order of gyoza (dumplings). Gyoza are created from a fine dough and usually contain a mixture of ground pork, nira chives, green onion, cabbage, ginger, garlic, soy sauce and sesame oil.

Whilst they’re sometimes boiled in water, the most common type is Yaki-gyoza, which are pan fried in a hot skillet, giving them a nice crispy surface.

In Hachinohe, gyoza often contain an extra ingredient, giving them a unique flavour – Garlic. It’s a pleasant twist on the usual flavour, and fortunately the garlic wasn’t too overbearing flavour-wise and they went down very well with my spicy ramen.
