Smoked Cheese
I spent four years looking for cheese in Japan. Then, in the space of just one week I came across a cheese factory in the mountains of Zao in Miyagi prefecture and a vendor in Yoichi street market selling a selection of smoked cheeses.
I realise the purpose of my trip on Tohoku 365 is to hunt down delicious Japanese food – but I found the vendor in Yoichi market to be pretty unique and worthy of documenting.
In the centre of the street is a stand run by Toyama san, a “smoking master”, who sells a variety of foods that he’s professionally and carefully smokes, ranging from fish, to vegetables and cheese. His food stall was easily one of the busiest in the market, and a small crowd were sitting nearby on a row of benches. The smoked cheese was so creamy,
