In the mountains of Iwate is the town of Tono, a picturesque countryside town surrounded by mountains and ricefields, that took my breathe away as I cycled through it with local, Tomoko Omori.

Tomoko used to be a Nurse but now spends her time running a guesthouse, where guests can cook alongside Tomoko in the kitchen and prepare a variety of local dishes – and pizza.

One dish that stood out was the Trout; firstly, marinated with flour, the trout is fried in butter. Once the fish is cook it is common to add some onions and carrots freshly sliced on the top of the fish.

I’m not going to lie, I’m terrible at the way of eating fish and bones scare the hell of me, but the Yamame melted in my mouth the second I tasted it. The trout absorbed the butter, giving the fish an incredible buttery taste.

If you’re feeling daring, you can also eat the head of the fish which is said to be full of vitamins.
But I’m not daring, so I didn’t…
