TSUKEMEN
Tsukemen is a noodle dish consisting of dipping cold noodles in a separate bowl of hot soup. As the soup is pretty hot it gives a nice contrast between hot and cold.
In the entrance of Mendouda, one of Yamagata City’s best ramen shops, you’ll be able to choose your meal on the vending machine, before giving the small ticket with your order on to the staff. You also chose your toppings on the machine to add on our bowl on tsukemen.
To be honest, this tsukemen was one of the best I have ever tried, and I had to control myself to order another one out of greed.
The sauce is composed of garlics finely chopped, small onions, soy sauce, awase miso, canola oil, ginger, and thick chunks of diced pork.
The soup from Mendouda was outstanding, it was perfectly spiced and very tasty. Every ingredients has a flavor we can taste and enjoy.
