THICK SOBA NOODLE MISO RAMEN
As a tourist it is easy to think about only one or two types of ramen, but Japan has such a huge variety of ramen and form my experience, the best ramen I’ve found tends to be in the countryside.
Things don’t get much more countryside than the region of Tazawa lake, and the nearby town of Tazawa. Just directly opposite JR Tazawako Station, you’ll find Soba Goro, a fine little establishment selling a variety of soba noodle dishes.
As a lover of all things pork I grabbed a miso based broth, containing thick soba noodles that had an excellent, firm chewy texture, that soaked up the taste of the broth wonderfully.
I love coming across places like Soba Goro – no matter how far out into the countryside you go in in Japan, you’ll always be able to find outstanding dishes.
